Stone Fruit Salad with Pecans and Blue Cheese

 A fresh, sweet and savory summer salad for the peach season

INGREDIENTS

• 4 cups spinach, or any type of salad green you prefer
• 1/2 peach, thinly sliced
• 1/2 plum, thinly sliced
• 1/4 cup pecans
• 1/4 cup blue cheese
• For the salad dressing:
• 1/3 cup olive oil
• 1/3 cup balsamic vinegar
• 1/2 Tbs honey
• juice of 1/2 of a lemon
• salt & pepper to taste

DIRECTIONS

1. Prepare dressing by placing ingredients in a jar and shaking until well combined
2. Prepare salad by layering ingredients together
3. Add preferred amount of dressing to salad
4. Serve
