Charred Corn Salad

Ingredients
  

  • 6 ears corn shucked
  • 1 red chili seeded and chopped
  • 3/4 cup cilantro chopped
  • 1/2 cup lime juice
  • 1/2 cup red onion chopped
  • 1 TBS olive oil
  • 4 oz queso fresco
  • salt and pepper

Method
 

  1. Heat grill to medium.
  2. Toss together red chili, lime, onion and oil in a bowl. Season with salt and pepper.
  3. Grill corn, turning occasionally until charred, 10-12 minutes. Let cool, then cut corn from cobs.
  4. Add corn to onion mixture and toss to combine. Fold in cilantro and queso fresco.
